Winter Squash a.k.a. Acorn Squash is our super food for the season. It is a good source of calcium, potassium, magnesium, manganese, copper, iron, and zinc. Winter squash is also high in vitamin C, which is necessary for optimal immune system function and especially important during cold and flu season. Boiling squash can destroy vitamin C, so it is best to steam or bake it. Acorn squash contains complex carbohydrates for energy and no simple sugars.
